Dimes X Assembly Spring Salad

We asked our friends at Dimes to create a delicious spring snack for us, and the finished product is delicious and dotted with hints of purple
The Dimes X Assembly Spring Salad!
This salad serves at least 4!
1 bunch asparagus
2 Radish sliced into coins
1 Apple quartered and sliced about 1/4" thick
1 cup Feta cheese
8 cups of mixed greens (arugula, baby kale, mustard greens, red leaf lettuce, etc)
Handful Alfalfa sprouts
Mint-basil vinaigrette (yields about 2.5 cups)
*1 shallot, roughly chopped
*1 garlic clove
*1 tablespoon dijon mustard
*1/2 cup lemon juice
*1 bunch of mint
*1 bunch of basil
*2 cup olive oil
And then you'll need to:
Add all ingredients but olive oil in blender and blend until pureed. Slowly add olive oil while blending until emulsified. Add kosher salt to taste.
1. Preheat oven to 425 F. Snap off woody ends of asparagus and discard. Drizzle asparagus with olive oil in a single layer on a baking sheet and sprinkle with sal and pepper. Roast for 15 to 20 minutes.
2. Add mixed greens, sliced radish and apple to salad bowl and dress with vinaigrette to the amount desired. Lay asparagus around the bowl and top with crumbled feta and alfalfa sprouts.
